You could floor around it but i d recommend against it.

Your planks do not have to fit tightly against the flange.

Laying a floor may seem impossible but that is far from the truth.
Against a toilet however there is no new sheet to form a seam and nothing to cover an expansion gap leaving an obvious channel in the floor around the toilet.

Although it s possible to lay laminate flooring around a toilet or sink pedestal in practice it s difficult to make an accurate enough cut to make the transition between the flooring and fixture.
I would recommend taking the toilet up and extending the flange up the quarter inch or so additional thickness that the floor will take up and then put it back down.
Your templates need to be the exact same size as your planks.
Use your jigsaw to cut the pattern out of the laminate planks.
Because laminate flooring floats above the sub floor on top of underlayment it will expand and contract slightly with the temperature and humidity of the room.
